Chef Dan’s “Three in one”

Capellini

(Known as Angel Hair Pasta)   

This is a great way to cross utilize the same basic ingredients for three styles of pasta dishes. 

The basics:   

  1. 1 tablespoon olive oil
  2. ½ cup diced onion
  3. 1 teaspoon chopped garlic
  4. ½ cup fresh diced tomato (diced canned okay)
  5. 1 tablespoon chopped basil & Italian parsley
  6. ½ cup of chicken broth or white wine.
  7. 1 cup marinara sauce (store-bought marinara okay)
  8. Seasoning salt mix – 1-2 pinches
  9. Cooked Angel Hair pasta! (Angel Hair cooks faster, but you could use any pasta you and your family prefer.)

Method:  Heat the pan, add the oil, sauté the onion & garlic, add the tomato, add the broth or wine, add the red sauce, season with S&P, add your heated-up cooked pasta and mix it all together.

Pasta # 1

Pasta  Pomodoro  with fresh Tomatoes

Combine the ingredients as described above.

Pasta # 2

Pasta Pescatori

  1. Add the oil to the pan and sauté your shrimp, scallops or seafood pieces.
  2. Add all the other ingredients to the sauté pan except the pasta
  3. Sauté the shrimp and sauce for about 2-3 minutes then add the cooked pasta of your choice.

Pasta # 3

Pasta Primavera

  1. Same as pasta # 1 except you add no marinara sauce, only chicken broth.
  2. Add a drizzle of extra virgin olive oil after you put the pasta on the plate.
