Got tomatoes? Sun-dry recipe
Meanwhile, a few tomatoes are turning red and peppers are ready to pick, which means gardeners are another week closer to making salsa.

EUGENE, Ore. - Excess cherry tomatoes from the garden? Make sun-dried tomatoes.

Cherry tomatoes are growing faster than many gardeners can pick them. While they're perfectly good to eat as a snack or as a salad add-on, you can save space by drying them down quickly and easily.

Making your own sun-dried tomatoes at home is a simple process.

Sun-Dried Cherry Tomatoes
Ingredients:
2 cups cherry tomatoes
Salt
Garlic Powder
Basil or Italian seasoning
2 Tablespoons Olive Oil

Instructions: First, rinse and stem your tomatoes. Next, slice them in half. In a bowl, combine olive oil, a pinch of salt, garlic powder and Italian seasoning. Stir the ingredients. Then lay out your tomatoes on a baking sheet lined with either aluminum foil or parchment paper to prevent sticking. Bake the tomatoes in the oven at 200 degrees. The tomatoes should take about 2 hours to dry.
